Coconut Curry Beef Risotto

How it tasted 味道

8/10

Born of a mistake: I meant to make coconut curry beef, but I put in too much coconut milk and it came out far too watery, so I just threw the rice in and made it a risotto — and it turned out unbelievably good.

How I made it 做法

  1. Marinate

Marinate the beef first (you can swap in chicken or add sausage — I’ve tried both). It’s simple: a little oil, soy sauce, black pepper and sea salt; work it in with your hands and let it sit.

  2. Stir-fry

Hot pan, cold oil: add the beef and pour the marinade in too, for a little basic saltiness, and stir-fry until it’s cooked.

  3. Season

Add Trader Joe’s curry (yellow or red both work), then half a can of Trader Joe’s coconut milk (for 200-odd grams of beef, about 100 to 150 ml is plenty — it smells wonderful).

  4. Make it a risotto

Put the rice you cooked earlier and the vegetables into the pan (I used frozen broccoli and peas). Tip it all in and keep stir-frying until everything is evenly mixed, and it’s done — it really smells so good.
